Krigging?

I have a set of data (always consisting of 'temperature/salinity and abundance) i would like to visualise.
On the abcissa i would like to have temperature, on the ordinate salinity and where these points intersect the value of abundance as color. Is this possible to do for several types of charts, and how can i do it? (As a coloured area and a 3D-wireframe /solid model)
And the next question is how to interpolate between several of these points? If having points (1,5/7,2/4134,6), (1,6/7.1/2300,0), (14, 3/8,9/1200) (and several more), how can i get a surface, without holes (i mean something like a krigging-algorithm)?
